Caring for your Sourdough Starter

Ingredients and Equipment Needed:

Sourdough Starter
Jar or small bowl
Spoon or small rubber scraper
Room-temperature water
All-Purpose Flour
Bigger jar or bowl
Food scale or measuring cups

You finally got your hands on a sourdough starter, but have no idea how to take care of it. If you don’t maintain your starter properly, I could get moldy and become unusable. Here is my easy sourdough care guide:

When you first bring your starter home, it’s probably hungry. The first thing you should do with it is make sure it’s well-fed. Watch the video below and/or follow the directions under the video.

1. Take out your jar of starter, all purpose flour and an extra jar/bowl.

2. Scoop out all but a Tablespoon (25 grams) of starter. Place this extra (discard) in your extra jar or bowl (or just throw it away). This extra can be covered and placed in the fridge. This is now your discard jar.

3. You now have about 25 grams of starter in your original jar. Feed this 50 grams of water (1/4 c.) and 50 grams of all purpose flour (1/2 c.). Stir well.

4. Cover your newly fed starter and leave it on the counter. It will take about 12 hours for this starter to be ready to use.

6. If you don’t want to make a loaf of bread with your starter and know you won’t use it for awhile, put it in the fridge.

7. If you want to have a ready-to use starter at all times, you should repeat this feeding cycle once per day. You can also feed much less flour and water for less waste. For example, scrape your bowl down to just a few grams of starter, add 10 grams of water and 10 grams of starter and mix well.

8. There are lots of recipes online for using sourdough discard. This is my favorite discard scones recipe, but there are lots of others if you search Pinterest.
